The grapes from the organically cultivated vineyard in Roddino are gently destemmed without pumping, so as not to damage the berries. Spontaneous fermentation then takes place for around 20-30 days on the mash in open tonneau barrels.

  • Fermented without selected yeasts (pied de cuve/spontaneous) and unfiltered
  • Aged for 18 months in a 750L amphora and 2-3 barriques
  • Bottled in June/July
